Kevin Labatt introduced himself as a representative of Red Rock Taco and told the Economic Development Committee the restaurant is located on Red Cliff Ranch at the corner of Highway 39 and Causey Drive in northern Utah. "We're here at Red Rock Taco on the the corner of Highway 39 Causey Drive," Labatt said, noting the site’s connection to local ranching history.
Labatt framed the business as part of the area's recreation and heritage offerings, saying Red Cliff Ranch is "one of the oldest and historic ranches in in northern Utah." He said the restaurant will operate through the end of September, giving residents and visitors a seasonal opportunity to visit.
