Carissa Clark visited Halls on Fifth in Apopka for the Taste the Town segment and featured Will Atkinson, chef and owner of Sweet and Salty Island Grinds.
Atkinson described and prepared a "hot butter chicken katsu" sandwich, explaining that the chicken is panko-breaded ("that's what makes it katsu") and is layered with a house-made sriracha mayo and a Hawaiian-style macaroni salad. "It's currently viral on TikTok," Atkinson said as he demonstrated assembling the sandwich.
Atkinson, who told the program he served 20 years in the Navy and later worked in IT, said cooking draws on family recipes from the Philippines and Hawaii and that his menu aims to reflect that heritage. Clark sampled the finished sandwich on air and recommended listeners visit Halls on Fifth to try the offering in person.
