The Everett City Committee on Community and Business Development on April 22 referred a petition seeking extended operating hours for a food truck at 1739 Rivier Beach Parkway to the full council with a favorable recommendation. Petitioners Gilberto Mendiola and his partner, Gonzalo Quintero, said the truck draws late-night customers and requested permission to operate until 4 a.m. daily.
"We tend to send the hours to, like, 4 o'clock in the morning," petitioner Gilberto Mendiola said, describing customer demand and steady traffic. Mendiola said the truck has been operating at the location for about three years.
Committee members supported the referral, noting a recent similar permission granted to another nearby food vendor. "We've never had any complaints since I've been there," Councilor Matuszewski said in support, and moved for favorable action; another council member seconded. The committee conducted a voice vote and referred the petition to the full council.
Under the petition as discussed, operating hours would be roughly 11:00 a.m. to 4:00 a.m. each day. Petitioners described the site as a food truck on the Parkway near Common Ground and said parking has not been a problem.
The item will be considered at the full council meeting later the same evening.
