Owner fights to save community restaurant amid financial crisis

During a recent city council meeting, the owner of People's Organic in Minnetonka, Mr. Swafford, expressed urgent concerns regarding the future of his restaurant, which has faced significant financial challenges. He confirmed that the establishment has insurance through State Farm and is currently focused on meeting payroll, rent, and vendor obligations while addressing back taxes.

Mr. Swafford highlighted the critical situation, stating that without resolving issues related to back taxes and obtaining a buyer's card, the restaurant risks losing its food license, which would effectively shut down operations. He emphasized the importance of the restaurant to both himself and his kitchen manager, Alejandra, who is also a partner in the business.

City council members acknowledged the struggles faced by People's Organic, recognizing it as a valuable community asset. They expressed a willingness to support the business but noted the necessity of compliance with city regulations, including the need for liquor liability insurance and the payment of state taxes. Council members urged Mr. Swafford to communicate more effectively with city staff, who are available to assist businesses in distress.

The council ultimately decided to refer the matter to an independent hearing officer, allowing for a formal review of the situation.
