Gonzalez recounted buying and transforming a small venue in 2006, surviving the 2009 recession and adapting to recent commodity price swings through menu creativity and customer engagement.
"Hospitality — that's what everything branches off from," Gonzalez said. He emphasized knowing the community, serving consistent quality and using creativity to manage rising food costs (for example by reworking dishes and diversifying menu options when specific ingredients spike in price).
Gonzalez closed with a personal note about long relationships in Miami Lakes and cited Colossians 3:23–24 as a guiding principle for how he treats his work and customers. The presentation was pitched as practical experience rather than a policy discussion.
